Now that 2020 is drawing to a close, it’s impossible not to reflect on what a confused and frustrating year it has been – and to hope that 2021 will bring greater stability. But, in the meanwhile, there are Christmas pleasures to revel in and precious time out to rest and reboot. This issue is full of simple, beautiful ideas to help you do that. GLOUCESTERSHIRE BARN CONVERSION

T

his Christmas marks a turning point as Jo Barnes and her family welcome their first guests to celebrate the festive season at Anthology Farm, a pair of Grade II-listed barns in the Cotswolds. It hasn’t been an easy journey to get here. In 2016, after a decade of uncertainty, the family farm in Staffordshire was compulsory purchased to make way for HS2. For Jo’s father-in-law, John, it was particularly emotional as his family had farmed there since 1921. ‘It was a difficult time,’ says Jo. ‘Not only had we lost the farm, but my mother-in-law Rosemary and I had to close our businesses, a farm shop and wedding venue, and start again.’ Fortunately, a farm came up 70 miles down the road in Gloucestershire and the family jumped at it. ‘We could see the potential immediately,’ says Jo. ‘Farms have to diversify these days to survive. The land was perfect for John and my husband Henry to farm and we knew the barns would make a fantastic holiday let.’ Anthology Farm is comprised of two barns, set in an L-shape. The previous owners had used them as office space and the buildings were full of small meeting rooms, long corridors and dark wood partitions. They opted to move the huge staircase in the middle of the main, bigger barn. Replacing it with a simpler one, set discreetly to the side, opened up a dramatic, doubleheight space that became the dining room. The huge, arched picture window at the back was updated and double-glazed, and most of the windows were changed to suit the heritage style of the barns. ‘We were really keen to expose some of the brickwork. It’s lovely, honey-coloured local stone from the Doddles Hill mines opposite the farm and we felt it would add real character to the property,’ says Rosemary. ‘Even though it’s a huge space, the light bounces off the walls and makes it feel really cosy.’ The family decided to engage an architect, as well as interior design company Run for the Hills (runforthehills.com), to work on the project. ‘As soon as I saw the barns, I knew I wanted to be part of this project,’ says Run for the Hills founder Anna Burles. ‘Jo did the right thing bringing us on board at the beginning, as we could ensure the architectural design also worked for the interior design. It succeeded because everyone collaborated so well together.’ The family knew they wanted the interiors of the barns to be neutral and monochromatic, but they also briefed Anna to add some eclecticism. ‘We deliberately gave every bedroom and bathroom its own personality,’ says Jo. ‘We wanted them to be cosy, stylish and comfortable, but not too fussy.’ Jo and Henry stayed in the main barn last New Year with their daughters. ‘The children thought it was magical,’ says Jo. ‘I particularly love gazing out of the picture window in the dining room over the Cotswolds. It’s an amazing view, especially when tinged with a little Christmas frost. The Barnes family bought the farm in 2016 and the barn conversion was completed in 2019.

icola Cliffe has a soft spot for Arts & Crafts houses and used to love walking past this property in her home town of Stamford, admiring the flower displays on the windowsills. Having moved away in her youth, she returned to the town with her husband Jonathan to bring up their boys George, Ted and Bertie, and this house was on the route to the children’s school where Nicola also worked, teaching science. ‘We lived just down the road in a tiny house and when Bertie came along, we really did need something bigger,’ says Nicola. ‘These houses don’t come on the market often and when they do, they sell very quickly, but we were very lucky – I knew the lady who lived here and she let me know in advance that she was putting it on the market.’ Nicola had been inside the house and knew it still had some Arts & Crafts features, such as the staircase, tiled floors and the fittings in the dining room. She also liked the proportions: ‘The windows say “country house”, but it’s not too big inside – it still feels like a comfortable family home,’ she says. The house had been altered over time and there was work to do to the kitchen, bathrooms and the configuration of the ground floor rooms, but the priority was to get the boys settled. ‘We moved in in January >

2005, and George and Ted were up in the attic rooms, which were freezing,’ says Nicola. ‘There was no insulation and we had to duct-tape the door to the eaves space closed as it kept blowing open.’ The attic was stripped out, insulation added and beams moved to accommodate new dormer windows. One side of the space became a study area and the remainder was divided into two bedrooms. The ground floor has also benefitted from some structural work. The couple added an orangery extension and rebuilt a wall to return a knocked-through living room to two separate rooms. ‘It’s nice to have larger spaces where everyone can gather, but it was also good to have the piano separate from the living room, and to have somewhere for the trombone to go, along with all the other instruments the boys were playing at the time,’ says Nicola. One of the biggest unforeseen expenses was replacing the windows at the front as road noise was an issue. ‘We kept the original single-glazed little leaded lights in the hallway, but the front ones are all now bronze casement windows,’ she says. ‘It was an investment, but they don’t rust or need painting so they are very low maintenance.’ The room that was trickier to fix than expected was the kitchen. ‘It has taken three attempts over the years > 32

to get the kitchen right, adding various extensions and moving it around, but that’s how a house develops,’ says Nicola. ‘We did it over years – we could have moved house three times in that time so I don’t fret about it.’ The final kitchen rejig saw it move to the orangery, which they had built earlier, and it’s now a large, open space. As the boys have grown up, the couple have adapted the space to suit the changing family dynamic. One of the biggest impacts this house has had on Nicola is the launch of her own textile business, Madder Cutch & Co, creating English prints in natural dyes. ‘I went from introducing a bit of William Morris fabric in every room, to going back to college to study for an MA in sustainable textile design,’ she says. ‘I now work from home in a studio at the back, but I also use the study and Ted’s old bedroom is my sewing room,’ she says. Even though they’ve moved out, the boys come home for Christmas – and now their girlfriends join them. ‘Last year it was fantastic having the extra space and large table, I don’t think we left the room all day,’ says Nicola. Cooking is a family passion, so the Christmas lunch preparations are shared, with Nicola taking on the head chef role. ‘We finish with a walk – Ernie needs tiring out.’ she says. ‘Then it’s lots of games and visits from friends. It has become a very social home that has grown with us.’ 34

aking the move out of London can take courage, but for textile designer Mimi Pickard and husband Ed, misgivings were easily quashed when they found their new home. ‘We love London, but we had arrived at the stage that so many families do, where we wanted more space,’ says Mimi. ‘The children were eight, six and four – the youngest was about to start school and the eldest about to change schools, so it felt like a good time to go. We knew quite a few people in this area, we found a school that we liked and it just so happened that friends decided to put their house on the market. We were so lucky as this house has such a happy feeling about it, and that’s what made us buy it.’ Early transformations focused on knocking down walls to open up space and improve the flow. ‘Our friends were very good about it,’ says Mimi. ‘They had done some great things with the house, including building an extension and adding a pantry and a utility room. But just as they had made it theirs, they appreciated that we needed to do the same.’ Mimi and Ed swapped rooms around: the conservatory is no longer an ‘add-on’ but is now the main living area, linked by double doors to a newlyassigned dining area. floor. ‘The hallway really is the heart,’ says Mimi. ‘It has been so important for managing the flow and for creating a welcoming entrance to the house. Before there was just a back door – no real front door to speak of. We moved the cloakroom and boot room along a bit and juggled things around to make space for one, and adding a porch has made a huge difference.’ The family moved in with Mimi’s parents for three months while the structural work and first phase of decorating took place. ‘We’ve been here a while now so things have also changed over time and my style has evolved, too,’ says Mimi. ‘It used to be much more shabby chic. When we first moved in, I painted the brick wall in the conservatory cream and added blinds and matting to cosy it up, but it’s one of those rooms that I should have taken longer over – I really do advocate taking time to get it right these days.’ The turning point for Mimi was a trip a few years ago to the Ham Yard Hotel in London, where she fell in love with Kit Kemp’s vivacious and confident approach to mixing patterns and colour. ‘I had just started my own fabric business at the time and it blew me away,’ she says. ‘There were also a lot of brights in fashion at that time and I’m drawn to the English eccentricity of the Bloomsbury Group, so it all came together and pushed me to be that bit bolder.’ Art is also important >

We recommend ending a walk through the Nature Reserve at this community-owned pub. It has roaring fires in the winter, it’s dog-friendly and the Wagyu burger is a winner.’

to both Mimi and Ed and there are gems in every room. ‘We have a few artist friends, including sculptor Nic Fiddian-Green – we have some horse drawings of his,’ says Mimi. There are also the Vanessa Coopers that Mimi loves for their naivety. The couple’s collection spans across multiple generations from inherited pieces to framed works by their daughter. In December, in particular, the house really comes alive. ‘I love Christmas – decorating the house, making it cosy and welcoming, and celebrating with friends and family,’ says Mimi. ‘We normally buy our Christmas tree early in December so we have time to enjoy it.’ Mimi and her family also have plenty of seasonal traditions to celebrate the big day. ‘In the morning our children come and sit on our bed and open their stockings, even though our eldest son is 30 years old!,’ says Mimi. ‘We then come downstairs, put the turkey in the oven, light the fire and give each other our presents. This is followed by a yummy breakfast and then we go to church.’ Christmas dinner is served to a crowd from 1pm, followed by lots of games and dancing. ‘Ours is a real family house,’ says Mimi. ‘What’s lovely is that if it’s just me and Ed here it doesn’t feel too big, but equally when all the children are home, it doesn’t feel too small either. It just works.’

or most parents, Christmas shopping is a highly secretive affair – even more so when you have five children to conceal presents from. ‘I am blessed with a lock-up cupboard under the stairs,’ says Maria Southwood, although hanging stockings from the bannisters above must only increase the anticipation about what’s hidden inside. Being a GP as well as a mother of five, Maria has to be super efficient with her festive planning, so by the beginning of December the tree is ordered from a local farm and safely installed at one end of the living room, ready to be decorated. For the second year now, it takes pride of place in their newly converted barn – a property bought after Maria and John’s fourth child, Anna, was born. ‘We were fed up with always trying to book country cottages for holidays and weekends and just missing them. We finally decided to buy somewhere of our own,’ says Maria. The couple first considered Gloucestershire, but decided on Somerset, where properties were less expensive. ‘I come from a family of architects, and my sister Claire and my brother-in-law Max, founders of the award-winning architect and interior design firm De Rosee Sa, were our obvious first port of call when it came to the barn’s conversion.’ A previous owner, a potter, had converted the barn some 20 years before, turning the garage into her >

studio and the living room into a double-height space. ‘It was too open-plan for our needs,’ says Maria, ‘and we needed more space for our family than the existing four bedrooms and one bathroom.’ Working with the family, discussions were ‘fruitful and easy,’ says Maria. ‘It was obvious we needed some intimate spaces and more bedrooms, so as visually exhilarating as the double-height space was, it needed to be divided up. Ceilings were lowered and floors added, but we still enjoy the extra height in the hall and an open apex ceiling in our bedroom, which overlooks the Mendips. We love to sit with the doors open and drink in the glorious view.’ The most logical design decision was to divide the house into two wings, with children and adult areas separated by the double-height hall. ‘Remote intercom devices for each child’s room means we do not have to be within earshot to hear a child’s cry,’ says Maria. The new porch is a huge bonus, although achieving perfect order is hard work. ‘You cannot imagine how long it takes to line up five pairs of trainers and wellington boots in tidy rows!’ says Maria. Wherever possible, the architects maximised the breathtaking views. As well as installing new doors in the main bedroom, they replaced a tiny barn window with a large bay one and added a cushioned window seat in the living room. ‘The window seat is a family > 54

We take turns to sit here and enjoy the peace of the rolling hills and meadows.‘ With her busy life looking after five children and running a doctor‘s surgery, Maria simply had no time to visit showrooms or big stores. ‘I bought the entire contents of this home online, from books to fill the shelves to sofas, beds, tables, mirrors, lamps and vintage consoles. It was all made possible because Steve Chivers, our local expert builder, was here to receive the endless run of deliveries,’ she says. Maria’s taste is homely, bright, fresh and contemporary. Raw wood beams and painted furniture add to the modern rustic feel. ‘I like a bit of mismatch because it feels more homely,’ she says. ‘With the children in mind, I went for sofas to jump on and stain-proof fabrics to withstand sticky fingers and the rough and tumble of small people.’ Her unifying element was the use of a deep blue/green colour that visually connects all the main rooms. ‘It made life easier for the painter, and it’s a colour I love.’ With a separate guest cottage and even a heated outdoor swimming pool, the house is made for entertaining. But it‘s never more alive than at Christmas, when the karaoke music is turned up and the children’s playroom is turned into a disco. ❝A hand-painted wedding invitation or Christmas card is very special ❞ WATERCOLOUR ARTIST AND CALLIGRAPHER, HARRIET DE WINTON

E

ven in the depths of winter, Harriet de Winton has only to glance out of the window of her cosy home studio, or go for a walk in the nearby forest, to glean inspiration for her festive watercolour designs. Her barn conversion nestles in the idyllic location of Haldon Forest Park in Devon, with far-reaching views over the Teign valley and Dartmoor. ‘It’s a beautiful part of the world. When I’m out for a stroll with my husband, Anthony, and our dog, Crumble, I’ll often collect something, such as holly with ruby-red berries, to weave into festive designs for my online shop where I sell my Christmas cards, wrapping paper, wedding stationery and party invitations,’ Harriet explains. ‘I may take my finds along to one of my seasonal watercolour workshops, or they might inspire one of my painting commissions.’ Harriet’s career path as an artist hasn’t followed the traditional route. With an English Literature degree and post-graduate diploma in set and costume design, she worked as a freelance set and costume designer and illustrator for many years, before her creative career took a surprise twist. ‘My step-sister

asked if I would design her wedding invitations, and I relished every step of the process,’ Harriet says. Spurred on by the response, Harriet decided to hone her watercolour skills and, after a conversation with a wedding stylist friend in 2015, the first seeds of the de Winton Paper co were sown. ‘I discovered that there were only a couple of other businesses producing hand-painted watercolour wedding stationery,’ she explains. ‘There was a gap in the market, and I knew how much people appreciate the time, skill and care involved.’ Harriet’s first official clients were a New York-based couple who commissioned everything from wedding invitations to thank-you cards. ‘I had to learn on the job quickly, but it was exciting and made me realise that I’d finally found my true creative niche,’ says Harriet. ‘I enjoyed chatting to the clients and producing beautiful designs to reflect their personalities and interests.’ With word-of-mouth recommendations, the de Winton Paper co’s reputation spread quickly. As the business flourished, Harriet asked the person who had designed >

WATERCOLOUR PAINTING IS SUCH A MINDFUL, RELAXING PROCESS❞ her previous website to create another for her new company. ‘At £2,000, this was a big investment but worth every penny,’ she says. ‘As well as my bespoke service, I started to produce hand-printed stationery to sell online: my House Collection.’ In January 2016, Harriet and freelance photographer Anthony relocated to Devon, where the next chapter of her country business began to unfold. ‘Having been asked to run a watercolour workshop in a local interiors store, I found teaching extremely rewarding,’ she says. As she is self-taught herself, Harriet could easily relate

to students’ concerns. ‘After every class I feel euphoric,’ she confides. ‘I’ve had such wonderful feedback over the years and I love the fact that people find watercolour painting so relaxing and therapeutic.’ In 2017, Harriet received a request from the organisers of Kirstie Allsopp’s Handmade Fair. ‘They were hooked on my “mesmerising” Instagram stories and wondered if I’d host an hour-long watercolour painting workshop for 100 people in a large tent. Although it was a little nerve-racking to start with, I enjoyed the experience and went on to launch courses at celebrity chef Hugh Fearnley-Wittingstall’s headquarters, River Cottage in Axminster.’ Diversification has been key to the success of the de Winton Paper co, particularly this year when COVID-19 has impacted the business. As well as selling her book, New Botanical Painting, on her website, she also stocks art supplies such as brushes, paints and digital downloadable pdfs to encourage people to have a go. She also launched a YouTube channel during lockdown, and found a new way to increase her customer base – just in time for the festive season. ‘Planning for Christmas starts in the summer,’ Harriet explains. ‘I test out designs for cards, wrapping paper and watercolour kits. By October I have these ready and can print the products, do production shots and upload the listing to my website.’ Her illustrations of cocktails and celebratory drinks are popular, and she has developed this idea into personalised cocktail hour invitations – ideal for Christmas gatherings. ‘I must admit, I’ve never had any specific goals or five-year plan,’ Harriet says. ‘The business has grown organically and, for me, the reward is the lovely messages I’m often sent after a wedding or workshop. HOW TO SET UP A YOUTUBE CHANNEL

When the UK went into lockdown in March this year, Harriet noticed a surge in the number of people watching her watercolour clips on Instagram Stories. ‘Lots of people contacted me requesting longer videos,’ says Harriet. ‘Several mentioned that their parents had expressed interest in watercolour painting, but were reluctant to go on Instagram or Facebook. I felt that setting up a YouTube channel could be the answer.’ With her husband Anthony’s freelance work on hold, the pair launched a YouTube channel, to promote the de Winton Paper co, via informative and relaxed, step-by-step tutorials, such as How to Paint a Watercolour Rose. DO YOUR RESEARCH Anthony was familiar with YouTube and advised Harriet to watch videos to get to know the platform. ‘I was keen to make my channel friendly and accessible to encourage people to paint, build on the lovely rapport I already had with my community, and add value to my brand,’ says Harriet.

THINK ABOUT EQUIPMENT Harriet invested in a microphone to ensure good sound quality. ‘I bought a RØDE VideoMic GO and cable for £58,’ she says. ‘We were fortunate that we had a professional camera and tripod already – perfect for good-quality footage. However, the camera on your mobile phone would be fine.’ SEEK OUT INSPIRATION While researching creative YouTube channels, Harriet turned to West Dean College of Arts and Conservation for inspiration. During lockdown, the college invited its expert short course tutors to create more YouTube clips. ‘These days, video is one of the most important forms of marketing content,’ says group head of marketing, Mandy Ross. ‘Creating video meant we were giving something of value.’ Like Harriet, they found that ‘How to’ and ‘Beginner’s Guide’ videos, particularly about drawing, painting and printmaking were well received. ‘As the college reopened,’ says Mandy, ‘the videos acted as tasters for our programmes, as well as being

a great asset for a major relaunch of short courses post-lockdown.’ PLAN AND EDIT YOUR VIDEO CONTENT Harriet takes about an hour to think through the structure of a YouTube episode and prepare any equipment. Two films are produced per week, and filmed in one block every Sunday. Filming one episode takes about an hour. ‘Although I want my videos to be professional, I’m not precious and, generally, don’t do retakes,’ she says. ‘My introductory video was just over five minutes in length but the tutorials run 35 to 40 minutes.’ EARN MONEY ON YOUTUBE To bring in extra revenue, Harriet linked her YouTube channel to her shop and is also aiming to monetise the channel through views. She discovered that before making any money from YouTube, there were certain criteria that needed to be fulfilled, including having 1000 subscribers on your channel and having generated 4000 watch-time hours from your videos in a 12-month period.

❝It’s a joy to help care for the Cairngorms herd of reindeer

Longtime hill walker Carol Parsons volunteers with the UK’s only free-roaming herd My first close encounter with the reindeer of the Scottish Highlands was 30 years ago. I used to go hill walking regularly in the Cairngorms National Park, where they roam freely, whenever my work allowed. I had seen herds many times but on this occasion, one spring, I was in the car park at the Reindeer Company’s main base, near the village of Glenmore, in Aviemore. Suddenly three reindeer heads popped up right alongside me! I was immediately captivated by these enchanting animals, at once so wild and yet so inquisitive and gentle. From then on, at every visit I would glean all I could about their habits from the knowledgeable herders who look after them. I started to take on a supporting role as a volunteer and now that I am retired I make the one hour’s drive from where I live in Elgin, Moray, several times a year to help the herders. My volunteering takes place midway up the mountains, at 600m altitude, in a 1,200-acre enclosure. At 4,500 square kilometres, the Cairngorms is the

UK’s largest park. The enclosure is where the females are homed during the May calving season, and some of the males are also brought throughout the summer and autumn. I assist in guided hill trips to the enclosure, sometimes aiding the herders to corral the animals. At Christmas, the reindeer are dressed up with red harnesses and attached to a sleigh, dotted with beautiful lanterns. If you’re lucky – and have feed – you might find yourself on the receiving end of some prickly kisses! They are all friendly and such characters, though some more shy than others. We also take the sleigh to towns around the Highlands. Wonderful fun for the young, and young at heart! Reindeer were first introduced to the Cairngorms in the modern era in 1952 by a Swedish couple, Mikel Utsi and his wife Dr Ethel Lindgren. Visiting Scotland for their honeymoon, they were struck by the similarities to reindeer pastures they had seen in Lapland. They brought eight Swedish reindeer across by boat and founded the Reindeer

Company. Since then the herd has grown to 150 free-ranging animals. The reindeer benefit the park’s ecology in many ways. Herders have found birds’ nests made almost entirely from reindeer fur. And the park’s snow buntings, one of the only non-migrating species of bird here, are able to access food during snow by pecking in the footprints the reindeer leave as they move over the ground. It gives me great satisfaction to think that my contribution, however small, is helping enable the reindeer to thrive in this environment. I missed the animals during lockdown and couldn’t wait to get back out into the hills. In July I hiked up to the top station and stood, looking out over the land, with only birdsong breaking the silence. I felt overwhelmed with gratitude for everything the reindeer have brought to my life – it was a spiritual moment. For me, and for many thousands of others, they have created magical memories. Interior designer Nicky Dobree recommends using plenty of lamps to cast a soft, warm light across the room at a lower level. Instead of a lone central pendant, she prefers indirect spotlights, on dimmers if possible. ‘They’re more discreet and can be hidden in the beams,’ she says.

PERFECT POSITIONING When it comes to planning the layout of your living room, an attractive fireplace will always make a fabulous focal point. Just don’t position seating too near and risk cooking your guests! You’ll also need enough space to put more logs on the fire – at least 50cm clearance is recommended. A centrally located coffee table is ideal for hosting drinks and reading material, but it shouldn’t be an obstacle or make sofa access tricky. Aim for about 30-40cm clearance all around. Pull sofas away from the walls if possible.

Adding comfort in a way blinds never can, curtains can be used to dress even the smallest of windows and will help keep the heat inside in the process. Even if your window is small or awkwardly placed, as in this country cottage, a thickly lined curtain can add colour and warmth. W

hen there is genuine synergy between kitchen-maker and homeowner, the results speak for themselves, and this beautifully curated kitchen is a great case in point. ‘We had an idea to create an eclectic space that didn’t necessarily look like a kitchen but still remained very practical,’ says Megan. ‘Woodstock’s designer, Guy, was really accommodating and helped us build on this concept.’ The Parkins’ kitchen plans were part of a bigger dream to transform the entire ground floor of their home. The renovations involved removing the original exterior wall and front door and adding a large contemporary glass, steel and brick extension that included a new entrance hall. ‘Previously, the kitchen was compact with limited light,’ says Megan. ‘We wanted a kitchen that felt like it was in the garden with plenty of light – somewhere we could spend most of our day.’ Plotting the layout of the new kitchen wasn’t straightforward. ‘It was important to ensure the old 114

kitchen space was used rather than just a thoroughfare to the extension,’ says Megan. The solution involved clever zoning, with the washing up and food storage areas in the footprint of the old kitchen, and the cooking and food prep areas in the much lighter extension. ‘It might be unconventional, but it ticks all the boxes for us.’ The dramatic, dark design of the kitchen was steered by Megan and Nick’s idea that is should blend into its environment. ‘We used a mix of door styles to create a laid-back, eclectic look, but unified them by painting the cabinetry in the same colour as the walls,’ says Megan. Leaving the mill’s brick and stone walls exposed was a great move; the flint tones sing against the moody paint. Just as envisaged, the kitchen is now the place Megan and Nick can most often be found, only retreating to the snug when extra cosiness is required. Best of all, the whole house now works in harmony when their family come to visit. ‘We love how well the old and new elements work together in both design and practicality, not least because every inch is put to good use,’ says Megan.

THE LAYOUT Bridging the original house and extension, the kitchen has an elongated layout that begins at the island and cooker elevation and ends with a reading corner at the back of the house. The majority of the food storage, both cold and ambient, is housed in a floor-to-ceiling unit opposite the sink. A small prep sink in the island reduces travel to the main sink.

Neatly combining extraction and induction cooking, the Parkins’ hob was originally only purchased as a back-up for when the Aga is turned off. ‘We’re really happy with this appliance and actually use it all year round now. The speed and level of control of induction cooking is amazing and the extraction is very effective,’ says Nick. The couple also love how the recirculating downdraft extractor, which has its motor tucked beneath the hob, leaves the ceiling above unobstructed. ‘We didn’t want an extraction unit hanging from the ceiling,’ he says.

WOODEN WORKTOPS

As they wanted something special for the handles of their new kitchen, Woodstock Furniture introduced Megan and Nick to Ged Kennett. An artisan metalworker based in Somerset, Ged’s designs are hand-forged and finished with variations in colour and texture that are all part of their appeal. ‘They’re solid brass with a blackened oil surface that is known as a “living finish”. This means the handles will wear very slowly over time to reveal the base metal and add unique character,’ says Nick.

Megan and Nick had set their hearts on solid wood worktops for the sink elevation. ‘We love the beam work in there and wanted wood worktops to complement them,’ says Nick. Usually a sit-on sink is recommended for use with solid wood worktops to reduce direct contact between water and wood, but the couple were keen to go for a modern under-mounted installation. Woodstock Furniture recommended the well-sealed Iroko worktop for its naturally high oil content.

CANDLE SERVICE A LA CARTE Have your secateurs at the ready to cut back any overgrown foliage, ready to be brought indoors for an instant festive moment. Holly is an obvious choice for Christmas, but for a trailing look, like on this chalk menu board, ivy will give you the best drape. When cutting back your plants, be sure you don’t sacrifice the health of your plant for the sake of a short-lived Christmas display – take care not to clip off too much foliage.

It couldn’t be simpler to recreate this festive centrepiece. Add colour and texture to a pillar candle with a collar of eucalyptus leaves in varying sizes. Use fresh stems or dry them out for a more long-lasting display. Secure the ends in place with florist wire wrapped around the candle. Cover with ribbon and twine for a neat finish. NATURAL BAUBLE Bring a festive element to your houseplant displays with a terrarium bauble or two. Sprinkle the base with a layer of sand and compost, then arrange mini cacti and succulents on top. Gently push each plant down into place, leaving a little gap between each one. Next, use a small tool or spoon to carefully add a layer of compost around your plants. Add a splash of water to each plant and finish with a layer of fine gravel to help with drainage. Gently remove excess soil from leaves with a small paintbrush. 120

When she’s not running her floristry business, Susan Bailey West loves foraging for hedgerow finds to decorate her own home with, particularly at Christmas As an only child growing up on a hill farm in Dumfries and Galloway in Scotland, I spent endless hours by myself creating dams in the burn, looking after my own animals and climbing miles over hills, helping my father with his cattle and sheep. A childhood in the wildness and raw beauty of Scotland has left me with an innate connection with nature. I suspect I absorbed my love for flowers by osmosis, playing on my own, creating an imaginary world from the primroses, foxgloves and berries that I found. I had a deep sense of the seasons. I was extremely dyslexic however, and out of school and in the wilds of the farm my imagination was caught by what I could create in the landscape. It was suggested I go to work and train as a florist with a family friend in

Renfrewshire. They owned an estate with beautiful gardens where they created flowers for events. I learned the basics of gardening and floristry and, after two years, moved to London to further my training at Constance Spry School of Floristry, as a trainee at The Savoy Hotel. I then worked for a private company who had contracts with The Connaught Hotel, the Tate and large corporations, before setting up my own business, after I’d married and relocated to Henley-on-Thames. Floristry itself is a complete sensory overload. From crowding yourself deep into a hedgerow to find the best rosehip berries, to pulling down the richest old man’s beard, it is completely immersive. There is nothing quite like the satisfaction of discovering full-

leafed, trailing ivy or gathering bun moss from the rich musty leaf litter of an ancient beech wood. I find arranging flowers for myself incredibly therapeutic. If I don’t have flowers in my house, it doesn’t feel lived in. Flowers give a home its soul. This Christmas, the mantel will be filled with an abundance of hedgerow finds: larch, fir cones, spruce, mistletoe, berries – and tucked between will be hyacinth bulbs in bowls of moss and twigs. The dining table will be full of candles, bowls of oranges with cloves, pine, cinnamon sticks, jasmine and eucalyptus, giving a wonderfully festive scent.

These meals are often familiar ones – think steaming bowls of soup packed with flavour that we cup our hands around and dunk crusty, butterslathered bread into – not least because, among the chaos of the festive season, we crave low-maintenance food,

dishes that elicit comfort. It’s good to know, then, that Baxters’ Favourites Range – think Scotch Broth, Cream of Tomato, and Lentil & Bacon – are still as comforting as ever. 16g salt 20g fresh yeast (or 1 sachet of dried yeast)

10g caster sugar 350ml warm water 200g mixed seeds 10ml milk

1 Sieve the flours and salt into the bowl of a food mixer and add the yeast and sugar. With the dough hook attachment, mix the ingredients on a slow speed, gradually adding the water to achieve a soft, but not sticky, dough. 2 When the dough has almost come together, sprinkle in 140g of the mixed seeds. Leave to knead in the machine on a slow speed for 10 mins, then turn it out onto a floured surface and work it for a further 5 mins. The dough is ready when you feel it tighten. 3 Put the dough back in the bowl and cover with a clean damp tea towel. Leave to prove in a warm place for 45-60 mins, until the dough has doubled in size. 4 Preheat the oven to 180C/Gas 4. 5 Tip the dough back onto the table and work to form a smooth ball. Place into a 2lb loaf tin, trying to get a nice smooth surface as this will help you get an even rise. Again, place in a warm place to prove. When the dough is just over the top of the tin, brush with the milk and sprinkle over the remaining seeds, then place in the oven. 6 After 20 mins, remove the bread from the tin and bake for a further 15-20 mins. The loaf is ready when it’s a nice goldenbrown colour and sounds hollow when tapped on the bottom. Want to spend Christmas content and stress-free? VERMOUTH SODA WITH ORANGE Sipping an elegant aperitif feels celebratory, and this one harnesses sophisticated flavours and a hint of Christmas (it’s the orange zest that does it).

SERVES 6 Ice

Zest of 1 large orange,

Green olives 360ml red vermouth or rosé

pared Dried orange slices

360ml soda or sparkling water

(optional) Sugar

1 Take six glasses and drop 3 ice cubes and 2 olives into each. Pour in 60ml vermouth or rosé, then top with 60ml soda or sparkling water. Hold a strip of zest over a glass and twist to release its oils. Drop into the glass or, for a more festive garnish, add a slice of dried orange. 2 To home-dry orange slices, preheat the oven to 120C/Gas ½. Very thinly slice some oranges (we used sun-blushed) and lay the slices flat on an oven tray lined with non-stick parchment paper. Lightly sprinkle some sugar over the slices and dry in the oven for 1½-2 hrs, until dry. Once cooled, store in an airtight container.

QUAIL EGGS WITH FLAVOURED SALT Upgrade sea salt with herbs and spices to create a crunchy dip for delicate quail eggs.

SERVES 6 1tsp caraway seeds 1tbsp fresh thyme leaves 25g Maldon sea salt 18 quail eggs

Sumac, to serve Caper berries, to serve (optional)

1 Toast the caraway seeds in a frying pan over a low heat for 1 min or so. Remove from the heat and once cooled, tip into a grinder or small bowl of a food processor. Add the thyme and salt, and pulse until combined and roughly ground. 2 Lower the eggs into a pan of gently simmering water and cook for 2 mins. Cool in cold running water to stop them overcooking. 3 Serve with bowls of flavoured salt, sumac and caper berries, if using, so guests can help themselves.

ROASTED POUSSINS Individual poussin have a delicacy – in appearance and flavour – that you don’t get with the traditional turkey. Roasted with radicchio and a scattering of sour cherries, they’re a perfect, piquant centrepiece.

SERVES 6 1tbsp Maldon salt

6 banana shallots,

1tbsp fresh thyme leaves Zest 1 small orange, grated 3 poussins 125g pearled spelt 1tbsp olive oil 1 radicchio, cut into wedges

unpeeled and halved 75g sour cherries 3tbsp white balsamic vinegar 20g butter

1 Grind the salt, thyme and zest in a pestle and mortar. Add freshly ground black pepper and rub all over the inside and outside of the birds. Place uncovered in the fridge for at least 1 hr or up to 24 hrs. 2 Cook the spelt in salted water, according to the packet instructions. Drain and refresh under cold running water. Set aside. 3 Preheat the oven to 180C/Gas 4 and bring the poussins to room temperature. Sit them in a roasting dish, drizzle with the olive oil and roast for 35 mins. Scatter the radicchio, shallots, sour cherries and spelt around the birds, turning to coat in the pan juices. Drizzle the vinegar over the birds, then dot a knob of butter over each one. Roast for another 15 mins. Turn the radicchio over and roast for another 5-10 mins, until the poussins are golden. Serve in the roasting dish to keep warm.

CREAMED CAVOLO NERO GRATIN A rich counterpoint to the poussin. Leave out the anchovies if you’d prefer a vegetarian version to serve as a main course.

SERVES 6 15g unsalted butter 3tbsp olive oil 4 anchovy fillets 2 garlic cloves, crushed 750g cavolo nero, stems removed and discarded, leaves torn into large pieces

450g full-fat creme fraiche 1tbsp Dijon mustard A good grating of nutmeg 75g fresh white breadcrumbs ¼tsp crushed chillies

1 Melt the butter in a pan with 1tbsp olive oil and anchovies, over a medium heat. Cook for 2 mins, until the anchovies have softened. Mash them with the back of a fork, stir in the garlic, then the cavolo nero. Add 5tbsp water and season with salt and freshly ground black pepper. Cook covered, over a medium-low heat, for 15 mins. Stir through the crème fraîche, mustard and a grating of nutmeg. Simmer for 3-4 mins. 2 Stir 2tbsp olive oil and the chillies into the breadcrumbs. Transfer the cavolo nero mixture to a gratin dish. Scatter with the breadcrumbs and bake for 10-15 mins, until golden and bubbling.

MAKES 18-20 FOR THE DOUGHNUTS 150ml whole milk 1tbsp fast-action yeast 1½tbsp caster sugar 300g strong white bread flour 1 large egg, lightly beaten Large pinch of salt 60g unsalted butter, softened Vegetable oil, for frying FOR THE CURD Finely grated zest and juice of 2 blood or sun-blushed oranges Finely grated juice and zest of 1 lemon

230g caster sugar 115g unsalted butter, plus 15g stirred through at the end 3 large free-range eggs, beaten 300ml double cream, whipped until it holds its shape, to fold into the curd FOR THE ORANGE AND CARDAMOM SUGAR 5 cardamom pods, seeds removed 2 strips of pared orange zest 150g caster sugar

1 For the doughnuts, heat the milk until warm. Pour it into the bowl of a mixer and stir in the yeast and sugar. Set aside for 15 mins. Add the remaining ingredients, except for the oil, and knead into a smooth dough for 2-3 mins. Put the dough in a clean bowl and cover with cling film. Leave in a warm place to rise for 1 hr, or until doubled in size. 2 For the curd, place all the ingredients, except the eggs, into a bowl over a pan of simmering water and whisk until the butter has just melted. Add the eggs and whisk constantly until thick and glossy. This can take up to 15 mins. Cover the surface with parchment paper and allow to cool. 3 For the sugar, place the cardamom seeds in a food processor with the zest and half the sugar. Pulse until ground, then stir through the remaining sugar. 4 To fry, shape the dough into balls, about 25g. Put on a baking sheet lined with parchment paper, then loosely cover with cling film. Leave to prove for 1 hr. 5 Deep-fry in oil heated to 170C for 1 min on each side, until golden. Remove with a slotted spoon. 6 Toss the doughnuts in the sugar and pile on a platter. Fold some curd into the whipped cream to taste and serve with the doughnuts. Enjoy warm.

I’ve been creative for as long as I can remember. I studied fine art at school and was taught how to paint, but I’ve always been obsessed with images of all kinds, particularly photography. When I found fashion and how special it was to create fashion images, it was the perfect vehicle for me at the time, so

image. I cover the canvas with gesso; it’s a slightly rougher finish than others would choose. I spent many wonderful years as a signwriter, on the side, often in St Ives, Cornwall, painting onto rough walls and pieces of wood, so I like the texture and prefer it to a smooth canvas.

I stepped away from painting and into photography. My love of fashion photography was always with the concept and creation. I’m so happy to be back to painting again, it feels much more ‘hands on’. I’m obsessed with the visual documentation of the past, whether that’s images of David Bowie with Elizabeth Taylor in the 1970s or war photography by Lee Miller. The images I seek to paint are about a feeling I need to assimilate. I then spend a day shooting options and lighting them, before I edit and manipulate the

I do the underpainting, often in black, then start on the figurative work. There are layers and levels to the paintings as there is typography that I’ll hand paint on top and then wash over to give it a feel of fitting in. There may even be another level over that, where I put plastic in the image or a light bounce or shine off the pages.

I work with oils, I just love the way they work on canvas, there is a sculptural element that I cannot get with acrylics. I’m in awe of many female artists past and present, from Frida Kahlo to Jenny Saville and more recently, Nina Mae Fowler. There is something to be said for how women interpret their worlds. Selling my first painting within 24 hours of joining Runway Gallery was a career highlight. I would ordinarily say that my paintings look best on either a light, neutral wall or a very dark one, but I saw a client had hung their painting on a wall with the most beautiful botanical wallpaper recently, and it looked brilliant. GG Stokes grew up in the countryside, in the Cotswolds, and moved to London to study fashion styling and photography at The London College of Fashion, graduating with both a BA and a Masters. She pursued a successful career in styling, photography and creative direction, working on fashion shoots for glossy magazines before becoming an artist. This elegant imagery and her connection with it continues to inspire her and is the subject of her oil paintings.

The wild vast view of the Black Mountains is especially enthralling in winter

MY FAVOURITE VIEW...

Hay Bluff, the Black Mountains, Hay-on-Wye I love mountains of any kind, but the stark, linear image of the hills of the Black Mountains in winter is especially beautiful to me.

At the western end of the mountains is Hay Bluff, a cliff that rises almost sheer and which you can see from miles away – I can actually see it from the attic room of my house in Herefordshire and this view from afar has been a part of my daily life on and off for 32 years. From Hay Bluff itself and, in particular, Gospel Pass, the highest road point in Wales, you have the most staggering, extraordinary view out west towards Wales. This part of the country is very wild and unoccupied, with the steep wooded valleys on the plain and River Wye glistening down below, and the hills of Wales rising up in front of 146

you. It’s one of the great views, I think, of the British Isles. What I find so inspiring about this area is the sense of wild space it brings. One of the things that’s so striking about America is this sense of space and enormity, which is not something we really have here. There’s lots of domestic landscape, which I love, but you go from Herefordshire which, by and large, is an agricultural, bucolic landscape and you suddenly rise up and you’re in the middle of mountains and great vast, untamed country, and that’s very exciting. Gardens are man-made and domestic. You can try and capture wilderness, but you cannot capture that sense of scale, that landscape, in a garden and nor would I want to. The British countryside is everything. Firstly, it is our history, it is

as monumental to human life as any great building. Our history is laid out in the countryside and should be preserved in exactly the same way as we would treasure and preserve a cathedral. Secondly, it’s a working landscape; it’s largely agricultural, and has been for a great deal of history, so it’s part of the daily life of thousands of people who earn their living off the landscape. And finally, it’s just beautiful and beauty should always be looked after. The British countryside is uniquely beautiful, there’s nowhere else like it in the world, we may take it for granted because it’s ours, but it’s precious and if it goes it won’t come back.
