THE FALUKORV, A SWEDISH COMFORT FOOD

Falukorv, or ring bologna as it’s known as, outside Scandinavia, is said to have come from the German miners at the Falun copper mine during the 16th and 17th century. It has since then grown to become one of the Swedes’ favourite comfort foods and it makes a perfect mid-week dinner. There are many different ways to prepare this sausage but the classic method for preparing it is simply to bake the sausage in the oven after prepping it and serve it with mashed potatoes. 


All you need for a delicious oven-baked falukorv is: 800 g Falukorv, 150-200 g grated Herrgårdsost (or other cheese of choice), 1 red onion, 1 apple (optional), 1-2 tomatoes, Heinz Chili Sauce, strong Swedish mustard.


1. Preheat the oven to 250 degrees and peel back the skin of the Falukorv (if it has some) and then place it on a cutting board.

2. Cut slices across the Falukorv about one centimetre apart, but don’t cut all the way through. The Falukorv should remain in one piece.

3. Pipe in or spread the mustard and then the chilli sauce into the slits in the sausage.

4. Thinly slice the onion, tomato and apple (if you want) and place each of the slices in the Falukorv.

5. Top off the Falukorv with the grated cheese.

6. Place on the centre rack in your preheated oven for about 30 minutes.

7. Check it after 20 minutes and if your cheese is brown, tent it with foil to avoid over-browning.

8. Let it set for about 5 minutes and serve with mashed potatoes and vegetables of your own choosing.
