End your Cinco de Mayo celebration on sweet note
with Key Lime Margarita Cupcakes!

Pillsbury Moist Supreme Key Lime Cake Mix
& Key Lime Creamy Supreme Frosting!
In addition to a box mix you’ll need 3 eggs,
1/3 cup oil and 1/2 cup water and 1/2 cup tequila.
The recipe calls for 1 cup of water, I substituted 1/2 cup of tequila for the water called for, but you can reduce the amount of tequila further, or use water only if you prefer.
Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
Combine cake mix, water, tequila, oil and eggs in large bowl, mix until moistened. Beat with a mixer on medium speed for 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
Bake 19 to 23 minutes or until toothpick inserted in center comes out clean. Cool 10 Minutes; remove cupcakes from pans to cooling rack. Cool completely before frosting.

I added a little lime zest and sparkling sugar
to the frosting along with a straw.
The margarita cupcakes are not terribly boozy, with just a hint of tequila. 1/2 cup of tequila for 24 cupcakes works out to be 1 teaspoon per cupcake. Next time I would try whipping in a wee bit of tequila or a dash of Grand Marnier in the frosting.
These cupcakes are muy bueno and
are fun for a summer fiesta too.
